Display, control device, & OS for car puter

I'm working on building a carputer. I have the Pi model B+ but need some pointers regarding selecting a display, input device & appropriate OS / UI. Vehicle pictures below. Its a 2009 kia sportage. The distance between the monitor is about 40 inches, so a bit far for a touch screen. I like the idea of a 9 inch but can't seem to find one that is not open frame I would like to have a wireless trackball.
