You need to install a VNC client on the iPad and tightvnc on your RPi.

Log on the to RPi and run vncserver, enter the password to be stored (and a second time for confirmation) when prompted. On the iPad point at the IP address for the RPi (port 5901) and login with the passwword.

It doesn't quite give you a fully featured graphical interface (because there's no copying of framebuffer overlays) but lots of graphical programs will just work.

How much of a budget do you have? There are some alternatives for getting monitors either cheap (under $20) or free. Suggested sources are: Freecycle (free), local businesses that are upgrading/replacing desktop PCs (probably free), local second hand/"thrift" shops (cheap). The monitors I use with Pis are generally 17" or 19" 1280x1024 and cost me $10 to $20, depending on what sort of sale is on.

For a school setup, you might send a note home with the kids asking the parents if they have any monitors around they'd be willing just give you. Specify what you're looking for (flat panel with DVI or HDMI connector) and see what comes back. As I'm migrating from 17" panels to 19" panels, I've started giving 17" ones (one so far, with a second to follow soon) to my grandson's teacher for the classroom (alas, no Pis in use there...but I'll work on that).

Of course, if you were local to me, I might find one or two to gift you with (any teachers with this problem in Vallejo, CA?).

Thanks for the information, I like the idea of asking for free ones.
Here is my situation, I am writing a grant for my school district for 68 pi's for 17 different classrooms, not sure I can get that many monitors donated but I will certainly try.
Have either one of you tried an adaptor or converter? I have netbooks in my classroom, but they are not hdmi so I would need to convert, but not sure if this is possible.

I am in TX so out of luck on you donating monitors to me, but thank you for your offer.

There are HDMi to VGA adaptors available and for recommendations look at this post, which would enable to use VGA Monitors:

As you have Netbooks then you can connect to a Pi with Ethernet Cable and use Remote Desktop to view the Pi's Operating System Command Line / Desktop on the Netbook Screen:

I have an HDMI to VGA adapter in use, but it cost more than a Pi does (it was about $40--on sale--when I got it). There are cheaper ones available that will work, particularly with the Model B+. Mine is actually being used by 3 Cubieboards and 1 Pi as it is on the output side of a 4-port USB/HDMI KVM switch.
