There are plenty of replacement laptop batteries for cheap prices on the internet, obviously you want to select one that can be externally charged in some easy fashion. (Seem to be plenty of chargers for laptop batteries too).

What's the minimum voltage needed to run the touchscreen?
Pick a battery with a higher nominal voltage.

What's the total wattage consumed by the pi pad and how what operating duration are you aiming for?
Pick a battery with an ampere hour rating that matches your design.

What weight and form factor do you need?

Voltage is critical but the ampere hour duration just wants to be as long as you can practicably afford. (Not necessarily financially, weight and form factor also weigh in to the affordability for your pi-pad).

I'm sure you've already designed in a safe shutdown circuit for low battery conditions (and an on/off switch) but if not you'll definitely need one.
