I get an "uptime" status email every day from my Pi2B hosted in a data center. It has been running a BOINC client for some time now:

Long uptimes come from the philosophy: If it's not broke, don't fix it. Short uptimes come from the philosophy: It's always broke, so upgrade and reboot at every opportunity.

I just jumped on the always update bandwagon with a few Intel-compatible systems and Arch Linux. I'm thinking of doing the same with at least one Pi. While better than expected, there are ongoing irritations with third-party kernel modules--wireguard, for example. On the other hand, I have a cluster of Pi Zero computers that have been stuck on an older kernel for a couple years now due to a regression with jumbo packets and the USB Ethernet gadget. Hopefully that will get fixed soon.

From a security point of view, it is not clear whether running new software with no known issues is better than running old software for which many issues are known and the workarounds in place. I suspect which works out better in the end depends on many individual factors.
