At this point I don't think there are any differences in the Pi's from UK versus China. There might be a difference if you get a Pi that is older than the current board revision. Check out this link: http://en.wikipedia.org/wiki/Raspberry_Pi

The available images for the Pi are located here: http://www.raspberrypi.org/downloads

The GPIO pins are prgrammable input/output pins for connecting to off-board devices. Check out this link: http://en.wikipedia.org/wiki/GPIO

Power supplies cause the most issues for people who are trying to get started with the Pi. The adapter you mention might work but it would be a weak choice. You really want one that has at least 1000 ma. Search the forum for examples that have worked for other people. My supply is not one that you can go out and buy.

The Raspberry Pi uses ARMv6 architecture, the Linux Distros you mention are for x86 architecture.

Raspbian "wheezy" (Debian) is the recommended Distro for the the Pi and is similar to Lubuntu in 'look and feel'
I will always assume you are running Raspbian for desktop and Raspbmc for XMBC !
