How do I change default application for a file type?

I have Raspbian Buster installed on a Raspberry Pi 4B.
The default application for PDF files is qpdfview.
How do I change it to okular?
Where are the application - file types associations kept?
I tried a .mailcap file with qpdfview changed to okular, but that did not work.

Use the command line sudo update-alternatives command.
Any language using left-hand whitespace for syntax is ridiculous
