Dual Monitor RDP machine with a 3b+?

So I've been tasked with finding out if this is possible. I've got the 3b+ along with a Gert VGA 666 adaptor but it can't display to desktops at the same time or I can't get it to recognise the VGA while the HDMI is enabled.

So essentially is this project possible with the Pi? Remote desktoping to a Windows machine and have the display's extend over 2 monitors.
