How do I set default web browser?

I had a working Pi image to which I added some new users (for my grandsons).

I have an Application Launch Bar which includes an globe icon for Web Browser - clicking this brings up Vivaldi, which I installed when it was released, although I don't recall setting Vivaldi to start with this. This comes up when I login as one of the boys.

I want to change to Chromium Web Browser and have set this as the default browser, however Vivaldi still starts when I click it.

I could change the Application Launch Bar to include the Chromium Web Browser, but there should be a way to change the default, but for the life of me I can't find it.

PS I don't want to uninstall Vivaldi, as I want to use it for my login.

here is what i did,
del globe icon and add chromium icon on panel.

actually works (as a global default)
