Welcome to the Raspberry Pi forums.

I'll start with the disclaimer that I don't have any experience with running any version of Debian on an RPi.

But the Raspberry Pi Foundation have a recommended and supported Operating System, Raspbian, which is derived from Debian. And there is a non-Desktop, shell-only version of Raspbian, known as Raspbian-lite.

I would suggest the Raspbian lite version over debian server which I have quite a bit of experience with. Raspbian Lite is very stripped down much like server is and I found very little to remove from it. I run all my RP3B's headless and it works just fine.
