Converting Raspbian (Pixel) into Raspbian Lite after installation

Are there a specific set of packages that makeup the difference between Raspbian (Pixel) and Raspbian Lite?

I accidentally loaded up the full Raspbian on my SD Card and configured everything exactly how I wanted. It wasn't until I plugged an HDMI cable in to check something that I realized I didn't do Raspbian Lite and I have an unwanted GUI loaded.

Is there an easy way to "downgrade" to Raspbian Lite?

Just find boot options menu in sudo raspi-config and set boot to CL.
If you need more space on your SD card then delete some of the heavy packages...... LibreOffice, Wolfram etc
Unless specified otherwise my response is based on the latest and fully updated RPiOS Buster w/ Desktop OS.

I'm assuming (because you mentioned an SD card), that you are talking about Raspbian on a Pi and the differences between the full Desktop version (which is not called "Pixel") and the Lite version.

There are quite a few package differences. I haven't tried downgrading (I only use Lite anyway), but I think removing raspberrypi-ui-mods and then doing apt-get autoremove might clear the desktop packages. Otherwise removing xserver-xorg should do it.

If you are not worried about SD card space, simply turn off booting to desktop in raspi-config.
