I wish to use a Pi as a MC.Is it possible to turn off the sound on the HDMI and output to audio output(this would be done permanently)?I use my Samsung to watch the broadcast and my amp to listen to it.

yes you can but you'll get better sound via the HDMI -
using a HDMI audio splitter would work
