Noobs multi-os - enable VNC

I wanted to use my Pi over VNC as I didn't want a second keyboard / mouse on my desk. I managed to enable VNC on the boot partition of Noobs but once I installed the OSes and rebooted I was not able to connect.

I tried the vncinstall trick on each boot partition but I wasn't having much luck. I ended up reformatting the card and reinstalling Raspbian which works well, but short of buying a card for each OS, is there any way I can get VNC to work across the board?

Is there a way of viewing the Noobs "MBR" so I can map the correct folders to the correct OS?

The NOOBs installer and each installed OS are completely independent. There is no global configuration. Each OS must be configured while booted to that OS.
Unless specified otherwise my response is based on the latest and fully updated RPiOS Buster w/ Desktop OS.

Thanks, where can I find the Noobs boot information that maps each OS to its boot partition on the SD card?
