sudo apt-get install chromium*

Gets the latest available. With a fresh install of Jessie 2017-07-05 that's V56.

What is "headless chrome"? I have never heard of such a thing.

Ah, I presume you mean this: https://developers.google.com/web/updat ... ess-chrome

Does chrome 59 come in a Raspbian package?

Google Chrome Browser has never been ported to ARM SBC's devices running Linux (except Android), Chromium Browser is offered instead.

Headless mode is in V59+, maybe if we are luck with next strech release or following ones we get chromium updated, V56 is from February, and earlier releases from that was on October/November, and V60 was just released.

The OP appears to be asking about Chrome Browser not Chromium Browser
