Hello guys and gals. So I was wondering if I could run the usual display manager using normal HDMI while running, I don't know, XFCE on the composite jack. I have a Raspberry Pi 2 Model B, by the way, if there are some differences on the older version.

No. You can't get output to both HDMI and composite.
