Avoid Noobs, use Raspbian Jessie Lite, any brand sd card should be fine, no-name ones tend to die in the first month.

The better/faster the card is the better performance you'll get from your Pi. Don't forget, It's running the OS from it. I was using a basic Kingston SD card and switched to a class 10 SanDisk Ultra card. The speed difference was clearly visible. Much faster booting up and launching applications. Jessie Lite, is command line only, just so you know. No desktop GUI. I run the full Raspbian Jessie on my main Pi. I play around with sensor breakout boards and the tutorials for them are written for Raspbian. I can't really tell you what OS is best for your situation though. I've never done anything with PHP and/or NodeJS.
