Remote programming the Pi

Hi,

I recently bought a Pi 2 and for the moment it is working great, but I can't find a way to work on it without having either a screen and a keyboard plugged in, or with vnc and a static IP address on my WiFi LAN. As i will be working on it in different places, I may not have access to a wifi network or a screen and keyboard outside of my laptop.
I would like to know if there is a possibility to remotely control my Pi and program it via USB, Ethernet or setting some sort of "direct" wifi connection between my laptop and my Pi without the need of a wifi network.

You can connect Pi and laptop with an ethernet cable.
You can use static IP addresses on both ends.

What would probably also work if you set up Internet Connection Sharing on you laptop.
The Pi can then get an IP address using DHCP.
It should not matter if your laptop is connected to the Internet or not.
