Capture video from coax camera

Hi.

I have a set up that captures video of salmon swimming up a stream. We do this to count how many fish goes up the stream and how big they are (roughly).

The setup is as follows:
Underwater camera (COAX connection).
Sensor
Cheap china VCR with coax input and input for the sensor.
A small screen and a mouse.

Every time a fish swims by the sensor, it starts recording. This set up works ok. But we want to upload the videos to a server so that we don't have to go into the woods to check out the videos.

I'm thinking about to ways to solve this.

1. Connecting a RPi to the VCR (CAT cable) and uploading the videos to our server.
-Problem, the VCR saves the video in a weird format that I can't play any other place then on the VCR. I've also have to find out how to transfer the files form the VCR to the RPi.

2. Removing the VCR and using a RPi 2 with EASYCAP to capture the video directly.
The RPi 2 should (?) be powerfull enough to capture the video. I don't think it's HD or any thing like that. It doesn't need to be either, we just need to see the rough length of the fish. And the I/O Pins should be able to handle the simple sensor (2pins).

I've already got a RPi 1 and a EASYCAP (somagic). And after searching the net, I think I'll need a RPi 2 and a EASYCAP with another chipset.
I've got a BNC to Phono connection for the camera.

Any input / help would be much appreciated!

Any luck with this project? We're thinking of doing something similar at remote locations. What video format are you using?
