Raspberry Pi 2 Red LED questions

1. I can't find anything that describes the default functions of the LEDs on the Raspberry Pi 2. Is there a document or web page?

2. On my Pi 2, the red LED is usually off, but comes up solid when it crashes. Is that normal?

The red LED is the power indicator which should always be on. If the red LED goes off that means there is insufficient input voltage. You need a better 5V power supply and/or a better micro USB cable.
Unless specified otherwise my response is based on the latest and fully updated RPiOS Buster w/ Desktop OS.
