Simple? automotive project

Hi all

I have a 1979 VW camper, and have been contemplating fitting a Raspberry Pi or similar to control a small LCD and various inputs.

The inputs I'm thinking are a voltmeter (maybe two inputs for when I fit a leisure battery), maybe connect to a CO detector of some sort to monitor those levels (both for cooking on propane and, as an air-cooled engine where the heating is air blown through heat exchangers over the exhaust system, exhaust gases in the cabin), and then some fun little things like in modern cars (doors open, things like that).

Would a Pi work for that? There's no OBD sensor or CANBUS or anything like that to take readings from, so it's old school wiring.

All can be done with the RPi however for life dependent items like the CO and Gas detector, I would use off the shelf, self contained battery powered RV type detectors as the primary warning. I would only interface those to a RPi as a secondary warning system.
Unless specified otherwise my response is based on the latest and fully updated RPiOS Buster w/ Desktop OS.

Where do I start to learn? Any particular thread better than another for learning how to create what I want, program the Pi, etc?
