Removing GUI

How can I completely remove the GUI from the standard Debian install? How much space will I get back?

Been a few people asking for this, and the answer tends to be "it's not easy".
If your SD card is bigger than 2GB, you'll actually have "unused" free space, which you can claim back with http://elinux.org/RPi_Resize_Flash_Partitions

You possibly already know this, and I know it's not directly answering your question, but Arch Linux doesn't come with a GUI, so there's no need to uninstall it.
