By 5000 x 3000, do you mean all in one go with no compression/interpolation?

If yes, do you have a monitor that can display those images?

I'm not sure about the subtitles, but the video should play OK.

JPG display is up to the app you use to display them and the display you want to display them on.

The image should be dimensioned for the screen. Just like a normal PC does.

And what OS should I use to do this things, can I share media trough the network using  the Windows 7?

The Pi will be able to read files being shared by a PC running Windows 7?

Yes, it run Linux but comes with samba which allows Linux to read Windows shared drives.
