Screen resolution, HDMI audio, Emulation Station

Without specifying a size, even with HDMI, the Pi chooses a resolution that was normal in the nineties. I told it to go 1280x1024. Problem is, not only is most of the stuff too small for an adult to read...

...but some stuff actually took up more space than before...

...and some stuff just took up the same amout of space as before (which is too much).

And ilf I disable overscan, everything takes up more space than they have.
Also, even when uncommenting that line in config.txt, no audio will go through the HDMI, it needs the headphone jack. And whenever I try to open a NES ROM with Emulation Station (I set it up with the tutorial here), it throws an error and goes back to the menu. And the startup command file doesn't seem to do anything. Also is it normal that I have to start xboxdrv from LXDE and click the X on the terminal window to make it do its stuff?
What am I doing wrong?!
