How to read the temperature from a water tank

I currently have solar water heater that comes with a controller device as you can see in the attached picture, however I would like to be capable of registering the variation of the water temperature during the day. Is there any suggetion you can give me?

In the attached picture you can also see 2 wires that come from the water tank that are used by the device to show the water temperature in its display.

I would strongly suggest that you do not attempt to connect to the controller. Get yourself an entirely separate temperature monitoring device and connect to the RPI.

Put "DS18B20 Raspberrypi" into your preferred search engine.

Agree. I would strongly suggest that you switch it all off, and consult a qualified electrician. It looks as though you have exposed mains voltage connections.
