New install of Plex MS but managing metadata better !

Hi all
I have had a Pi 3b sitting around for ages that I decided to run a Plex server off.
I have a powered 1tb drive and a USB portable 2TB drive attached and mounted as ntfs
I also have samba installed and all working correctly - I can browse my two drives through my home network just fine.
I installed Plex media server and it worked to a point..then I found that it basically filled up my root drive with metadata and application support to the point I couldn’t add anything else to my libraries.
So I decided on a clean install BUT I want to direct all the backups and metadata to one of the attached drives rather than the root folder.
Is there a really easy beginner means of sorting this out before I start the Plex server ?
I’m really new to the pi...
Would mounting a pen USB be a way of doing it ? Or modifying a line of code to direct the folder towards the big drives?
Help...I really want this to work...
