Yes, use an HDMI to DVI cable or HDMI-HDMI and an adapter.

Yes, I ran my Pi 3B for quite awhile on an old Acer monitor with an HDMI cable and an HDMI-DVI adapter. Worked great.

Thats the way I went, it lets me swap the official cables depending on what Pi I'm using with that spare monitor.
