its not going to be easily viable to do what i was thinking due to processor, memory limitations etc espically if its recorded as a raw file (WAV) where that could be a very huge file!
You could use some compression to the audio such as uLaw or aLaw to get about a 2 to 1 ratio over direct PCM audio. GSM is about 10 to 1.
8000 samples per second, 2 bytes per sample, 7 hours is approximately 403MB of storage without any compression. You probably can't tell the difference with uLaw or aLaw compression depending on what the source is. GSM has more loss of fidelity.
Depending on your source you could sample at a lower rate and take only 1 byte samples.
I don't think you would have any problem doing this with a Pi3.
