is there a way to increase the resolution to 1080p with the ubuntu mate and raspberry pi 2?

You may be able to force it by coding hdmi_group= and hdmi_mode= in your /boot/config.txt
Install the tvservice command and take a look at what your TV/monitor is capable of running.
