Apologies if I use mixed terminology or windows references bit it is the os I know and I and trying to learn Linux.

That said here is my question.

Is there any way of seeing what is installed? Like windows has add / remove programs is there an equivalent in wither the gui or cli? I know i can remove the app using sudo apt-get remove xxxx but i need to know what xxx is

dpkg -l piped through more will tell you all the packages you have installed, which isn't exactly the same thing, but may be informative. If you install dselect you can see a more tabular view of your packages with explanations about their use.

...or you can use synaptic in the GUI (you may need to install it first).
Linux is a lot more modular than Windows, so you may see a much bigger list of programs than you were expecting ;)
