From the config.txt documentation here. The only settings specifically for the composite output are

sdtv_mode to change between NTSC and PAL
sdtv_aspect to change the aspect ratio to one of 4:3, 14:9 or 16:9
sdtv_disable_colourburst Setting this to 1 disables colour burst on composite video output. The picture will be displayed in monochrome, but it may possibly be sharper.

Composite video is poor compared to good HDMI displays.

Just bad resolution, or really bad with noise and lack of colour?

The composite video output can only display at something like 720x576, so you won't get great quality. However if you are using the wrong cable you can get a very bad and unstable picture due to the wires being connected the wrong way round.
