Arcade build questions

Hi All,
I am in the beginning stages of building mini arcade game using RPi. My husband and I were given a very old tabletop arcade cabinet (he collects stand up arcade games). I believe it was an old poker machine, with only buttons, no joystick.
I am looking to gut it, make my own control panel with a mini joystick and 6 buttons, for the classic games and MAME. From what I have read online, this won't be too hard. But, what I am wondering is, if there is a way to also incorporate 2 USB ports for various game controllers (NES, SNES, Sega, Atari, etc) to plug in and be usable?

Should be easy enough. All the newer pi have 4 USB ports. You can use two extension cables or a hub and a extension to bring ports to the side of the cab.

You may however encounter some config nightmares by allowing users to freely plug and unplug USB controllers.
