I did the "sudo apt update && sudo apt upgrade -y". Then tried to create a superflat terrain to try login to the game. It gets stuck here as shown on the picture.

Its more then likely something wrong with some installation step. I don't have a lot of experience using the pi. Just followed random tutorials to install the operative system and the game. It seams the game crashes just on its own randomly in the menu screen. I will try to reinstall everything from a full formated SD card. But as this is the 3rd time doing that its starting to become a bit hopeless to the exact step I'm missing or how to even fix it.

Now try to load this world... It should work. Else I do not see what is wrong, but remember this is experimental. Did you tried going on a server ?

After finding my UUID from this sight and setting it. https://mcuuid.net/
I tried to login to a server. One of the survival servers was impossible to login to. Crashed immediately, a server that I had issues trying to login to using the Minecraft Console Client as well with my pi.

Another creative server I logged into caused a freez after 1-2 seconds and my pi became unresponsive.

I also tried to generate a new super flat world and login to it. Crashed as shown in the picture above.

I should note that I'm connecting to the pi using RealVNC and I used this guide to install the operative system.

I also should note that I could run Minecraft 1.8.9 when installed and play it, although it was choppy it worked fine. Its only the change to 1.11.2 that seams oddly impossible. I have even attempted to reinstall everything from scratch and try it again all over from the start with no change.

Either I miss some form of update, old java version or some other unknown update that I'm unaware of or there is a key important step in some guide or something that I'm missing.

That would be really sweet. Could easily test that way.

I'm getting 10-30 fps on a overclocked raspberry pi 3! This tutorial is awesome!

I am actually making fixes for 1.9, 1.10, 1.11, 1.12, and forge / optifine.
I will post them here with some automated install script for off-line mode. But I do not have that's much time to work on.

That would be really nice. Really hoping that 1.12 might fix so Minecraft is playable on the pi. The guides here on this thread starts with an assumption you have a working pi already. There is no instruction where its installed from a formatted SD card. There must be missing installations steps and is the reason some people have problems and others don't.
