I don't know what will happen if I use the "Lite" version of Buster concerning use of the RPi as an OpenVPN server. It is going to be headless and just serve as a connection server.
Is the difference between Lite and regular versions all concerning the GUI interface so it can be disregarded and thus getting a more light-weight server system that runs headless?

There is no 2B+ model, and yes, the difference between Lite and Desktop versions is the GUI and other associated pre-installed software. The core OS is the same.
