Wireless display

I'm doing a project that has a pressure sensor and level sensor and want to display the level and pressure on a display but want to do this wireless and not use internet any ideas.

Not enough info. I'm assuming you are connecting the sensors to a Pi via the GPIO pins and want to "display" the readings remotely. How remote? In the same room? In another country? How many digits? What kind of accuracy? How often? Once an hour? Once every millisecond?

Perhaps if you said more about what it is exactly you want to do we could help better. What range do you need? What environment will it be in? What do you expect to transfer over wireless exactly?

it would be up to 30 meters, to one decimal point and every millisecond

I am trying to measure pressure and level and have them displayed up to 30 meters away and would like the accuracy to be to one decimal point and i don't want to use WiFi and was thinking Bluetooth but unsure on how to do this

Why don't you want to use Wifi ?
I think it would be the easiest way.
you could have a pi that get the values from the sensors and another one that would display those values.
a 1 millisecond interval is not feasible anyhow.

Updating at 1000 times per second is almost certainly not possible.

Why would you need such a high update rate anyway. A display will only refresh 60 times per second and the human brain viewing it will register the updates even more slowly.
