Santa Infrared sensor-potentiometer

Can anybody tell me what the potentiometers are on the infrared sensors in the Santa infrared sensor project? Also, I don't understand the single trigger/repeat trigger options. How is the repeat trigger moved so that the infrared sensor is set to repeat trigger mode? Thanks.
