If you don't need anything else connected to the single USB port then the Pi Zero v1.3 should be fine. You'll need to control it from another computer with SSH or VNC (that's how I use mine). If you want to be able to use WiFi and connect a USB device, then you'll either need a Pi Zero W or a USB hub.
With the Pi Zero W you can connect to WiFi and use a Bluetooth keyboard and mouse without using the USB port.
Another option for controlling a Pi Zero is a serial console cable (available for less than $2 on ebay).
USB gadget mode would be yet another option.
