RCA Video, 3.5mm. Cables and adapters

Hi, I just ordered the RPi with a clear case for Singapore and it'll take about 12 weeks for despatch!
Complete beginner. Love the concept of RPi.

Anyhow I am curious about the RCA and 3.5mm out. The HDMI seems straight forward for HDMI or DVI-D to a HDTV or a DVI-D capable monitor respectively (DVI-D won't carry audio yes?) but what about the RCA Video out? If I wanted to use it on an older TV which only takes RCA Video and Audio (L&R) . Could I use a S-Video Male (with a S-Video Female to a RCA Video Male and plug it to the RPi's RCA Video Out) to RCA Video and a 3.5mm to RCA Audio(L&R) on the old Television?

I'm not sure if using adapters would be that simple. Will the above setup be possible in theory?

It should be that simple.
I haven't tried with S-Video but it should still work as long.
