DJI Phantom 1 Battery for Pi

I am wanting to utilize my DJI Phantom Batteries to power my Pi 3 with 7" touchscreen monitor. Here is the battery I have:

Mine are actually 2400mAh, I have 4 of them and I don't use the drone very often, so wanted to see if using this:

...would work to power the Pi and touchscreen so I can have a completely portable solution for my Pi.
The battery output is 11.1 volts.

you need a dc-dc step down converter with 5v 3a output (2.5a maybe ok too)

you could also likely use a car usb charger, if rated at 2.5a+

I'm sure I can find something about this, but while I'm here, is there a way I can monitor the life of the battery?

I have not found a solution for a battery monitor, if anyone has a suggestion, it would be appreciated.

Also, is it possible to plug the touchscreen in using the available power port to avoid the low voltage lightening warnings?

It you see a low voltage warning your DC/DC is too weak.

Maybe the wrong forum for asking how to monitor DJI battery :?
