What are you interested in?
Blinking an LED is not very interesting... I'll give you that... but if you build an LED array, or even just a line of LEDs (like 8) then things get more interesting... light patterns are fun; but also logic problems abound which are equally fun... like how to send a function(n) a value n and have it display on the LED panel (or array) correctly, in reverse, &c.
I like to create my own scenarios , breadboard them , then code to them to see what I can make them do... this question is a little like, "I have a box of legos, now what?" ... um, start building, be creative.
