MPD and MPC should do the trick...

You'll find threads describing how to implement them.

you also need to do "sudo apt-get install mpd"

(mpd is a server, mpc is the client which acts as a control for mpd).

there are a bunch of good simple console based clients for mpd - I like ncmpcpp, which you can install with with "sudo apt-get install ncmpcpp"

There are also some pretty neato iphone and android clients for mpd which allow you to use your smartphone as a remote control for mpd.

I have used today ... the new Whezzy Raspbian ... absolute headless!
Update and Upgrade maintained
MPD MPC installed ...
TightVNC to connect my WIN-Notebook
USBmount to mount my Stick or USB Harddisk automatically
After that i tried Sonata and GMPC as GUI
everything works like a charm now.
Except a Noise at the end of a Song ...maybe MPD or the RasPI.
For me as a non unix or linux user and 2 days Owner from a RasPI was it after reading from a few Forums a surprise to get all running.
Still looking for a Webinterface to control MPD with my Touch Ebookreader
