Using a RPi Zero through USB for data aquisition

Hi, i have a doubt for how i could do my project, that consist in a multiplexed data aquisition using a A/D converter and RPi Zero. I was thinking in use the RPi as a USB gadget (using ssh communication), and execute a script for data reading from the PC, which controls what ch is in use and the other parameters, like gain. So, i also want to plot a real time graphs, in PC, while de data reading script is running.

Anyone have some idea for how i could realize that project?

All possible. Split it down into the separate stages and implement them one at a time in a logical sequence. Test as you go along.
