2. Drones aren't easy. In theory they are simple but in practice they are a lot more complicated

Many drones will use a 'simpler' microcontroller rather than a complex SoC like the Pi. For example the ArduPilot controller uses ATMega microcontrollers. Advantage is that they require less power and will 'boot' quicker than a Pi with a full OS will.
It is certainly possible to create a drone with a Pi (since it has been done) but you'll need a bigger battery for similar flight times.

When you say motion sensor you mean IMU. Most people will use a MPU9250 and it can be connected either via I2C or SPI. But do realize it is a complex matter to get absolute orientation from them.

Broadcom haven't fixed the problem with their I2C interface
What OS/Language are you using?
I gave up on i2c + Linux and now use Ultibo(baremetal), works fine.
Have not tried Ultibo for drones yet.
I'm dancing on Rainbows.
