NAS via NFS, SMB, SFTP (inconsistent speed)

I’ve got a Raspberry Pi 3 with connected to it by an active usb hub and sata to usb dongle 2,5’’ hard drive (Hitachi HTS547575A9E384). The Pi (on Raspbian strech) is connected to a router (TP-Link Archer C2 v1.1) trough cable. On the other side is my laptop (Acer V3-771G on Ubuntu 16.04).

My problem is a very inconsistent transfer speed. For example when I transfer a 4.9 GB file, the first couple hundred MB transfers with speeds 45 up to 90 Mb but after that it slows down and is oscillating around 1 to 10 Mb (on cable and on WiFi).
Using Samba is very troublesome because I get connection time out warnings and I am unable to transfer a file on my Ubuntu, when I use a Windows machine I can connect but its very slow.
When I use sftp or nfs I have no problems but inconsistent speed.
I’ve played with nfs settings based on http://nfs.sourceforge.net/nfs-howto/ar01s05.html but got no better results.
Currently in exports I have this:

mount -t nfs -o rsize=8192 -o wsize=16384 /mnt/nfs
Can I do something to get stable speeds around 8 MB ?
