Unorthodox Plex Setup Help!

Okay, so I've a few questions about a potential plex setup... Lemme explain:

I am looking for something lighter than rasplex on my Raspberry Pi. I thought about running the Pi in Kiosk mode. In my Plex library, I only have a handful of 720p MP4 videos and everything I ever plan to upload will be 720p. So, I won't need anything outside of a web media player.

1. I want to install Raspbian lite
2. I want to only install Chromium and a network manager GUI
3. I want to be able to control with a bluetooth remote (so I'll need a way to configure/connect it)

What I'm thinking is that on boot, the Pi displays a Network Manager to choose a network to connect to. Then, it boots to Chromium in kiosk mode (plex.tv). I'd like to control all of this with a remote, so I'll need an on screen keyboard...

Setting this up for my family, including grandparents... So I only want it to do these specific things in order to make it easy to use but hard to break.
