where/how to create config.txt openelec/berry boot usb stick

Title is a bit a mouthful, I know.

I danced between open elec/raspbmc and ended up reverting back to raspbmc since I wasn't planning on streaming files between computers, I'd rather just be able to stick a flash drive with content and have immediate access to it.

Anyway, so I used berry boot to install openelec to a usb thumb drive. Everything is great, menus are fast and I can access files I want from sticks fine. The only problem I encountered is the regular method :

mount /flash -o remount,rw...etc
Doesn't appear to be working, I'm assuming the issue is because I installed to a flash stick for memory speed. Is there a working routine for creating a config.txt if you installed the os to a usb stick? I'd like to be able to add codecs/overclock.

Spent a few hours like a monkey and eventually discovered what I think was the config file raw on the sd card rather than the usb. I tossed in the settings for turbo (I have heatsinks and it keeps temps 20c below bursting into flames) I tested it for a bit by just leaving it as is. Saw that it was cycling after a bit (booting off/on) so I guess I found the right config :? .

Reduced the overclock a bit and it appears to be stable.
