Running Raspberry Pi But Only Viewable to Administrator

I'd like to run Raspberry Pi on a Customer's Physical Location.
I don't want the customer to be able to plug in a Video Display and see it running / with the secure data.

How do I turn on the Raspberry Pi, get the software running,
without a person in the physical location being able to access the data?

Possible Solution?
OS starts
Software Starts
Then, Screen Saver comes up
But Software still running in the background?

How is the Pi secured from physical access?
If anybody has physical access to the machine, all data that is not encrypted is accessible.
As for switching off the display, use the tvservice command to do this.
