Last time I used the Berryboot installer it had options to install the root file system on alternate media, so might look into that. You'll still need the initial boot partition on a microSD card, though, but it can be read only. (Granted, that install was with the version of Berryboot for the Cubieboard 2 and supported a directly attached SSD--which is why I was using it--but I did install Raspbian with it.)

Check the Berryboot site and see. As I noted, my reasons for using it were (1) it would install a version Debian (which happened to Raspbian) and (2) it would install the OS on an SSD attached to a SATA port. The board still does the initial boot from a microSD card, but I've had a Cubieboard running that way for over 2 years now without any microSD issues.

This would, in all likelihood, be slower than using Raspbian. Raspbian has a load of Pi specific tweaks for speed, XUbuntu doesn't. You could run Raspbian from the USB stick with the boot done by the uSD card. Not sure that is any faster than doing everything on the uSD though, maybe slightly faster, maybe slightly slower.
