Is it possible to connect a PS2 mouse to the PS2/I2S pins of the GPIO (which appear on pads on the circuit board) so that you can keep one of the USB sockets free?

PS/2 devices use 5V signalling, and the Pi's GPIO are all 3.3V, so you can not connect them directly.  You could convert the voltages with some electronics, but then you would also need to write a Linux "gpiomouse" driver.

Slightly easier would be to connect an old serial mouse to the UART.  That still needs level conversion (to/from ±10V), but you should be able to use existing drivers.
