Most likely it has a real LCD  interface (24-bit LVDS parallel) which the Raspberry-Pi can't drive directly . You need an LCD driver IC for that. That is a major project for which you need a electrical engineering degree. You want to know my hourly rate?

From the datasheet I see it needs 5 different supply voltages (3.3V, +/- 5V, +/- 14V) and it has 60 pins on the data interface (on a 0.5mm pitch flex cable). This doesn't sound like a simple project to me.

I already have a Kitchen computer. It is my Touchpad., big 10" touchscreen and it lives in its dock quite happily. If I was having it control something like a Sous Vide then it might need to talk to a raspi over wireless to do the real interfacing stuff.

The touchscreen part is done via Usb this can clearly be seen in the photo. Large cable bundle at the bottom has what looks like a VGA connector and a USB connector.

Try here for HDMI monitors.

Maybe a display from an android phone is better than from an iphone. Samsung for example publishes the android source code for their phones. It should be easier to create a dsi driver for the lcd displays and also for the touchscreen when you can copy and paste from the android driver.

Pardon me for worrying, but I don't see any specs for the touch part, and I don't see any plugs for getting touch data to the computer. Title aside it looks like just a screen.
