Have you tried running KDE Plasma on it? Both that and GNOME 3 have pretty good touch support, and you'll get decent hardware support that way. I don't think you're going to get a satisfactory Android experience from a Pi. Once you have something up ...

... super slow (max 40 kB/s), so I've been running some diagnostics trying to figure it out. When I speed tested the hard drive on the pi with gnome it is saying read rate is 41.6MB/s and write is 216kB/s. Any idea what would be causing this or how to fix it? Thanks!

Gnome now uses wayland by default, and I'm sure there are still issues going from x86 to arm. The Debian team just squeaked by getting it into 10. You might be better off trying to get it up and running on Gentoo.
