I don't use 'at', but one understanding of '+ n days' is: "pass midnight n times from now before activating at the set time". I think that is consistent with your observations. I googled and found an "instructable" that installed a package called motion.
I tried it on my old available RPi3 running Jessie, but it would not start the service.
I guess I have to create anew SDCard for the RPi3 and use Pi-OS instead...

If I move the desktop file into ~/.local/share/applications then it appears inside the Pi menu below "Other" and can be started from there without the extra dialog.
If I right-click it in the menu I get the option to "Add to desktop" but if I do this again it will pop up the dialog when used....

I used an Ubuntu server I have as the file store.
Just had to install NFS server and then it worked like magic using an nfs share! :D
Much easier to install and configure than samba....
